I love this baked feta dip in part because you can prep it in just a few minutes and pop it in the oven. The tangy, salty feta pairs perfectly with sweetness of the cherry tomatoes and the slightly tart sun-dried tomatoes. I love using this dip with crostini, garlic bread, chips, or even veggies.

What is garlic confit?

Confit is a French method for cooking that involves covering a food in fat (like oil) and cooking slowly until rich and tender. When you add garlic to a confit (pronounced con-FEE), it makes the garlic creamy and brings out the sweetness.

Could I use this recipe with pasta?

Absolutely! My cookbook includes a recipe for Simple Summer Fettuccine, and you can easily sub out the sauce for this recipe. Or just cook your favorite pasta according the box’s instructions, then add the drained pasta to your baked feta dip and stir.

How do I make crostini to go with this dip?

Take a baguette (it doesn’t have to be super fresh – the bakery at your grocery store may have some baguettes that are a few days old on sale!) and cut it into thin slices on the bias. Brush both sides with oil and add to a lined baking sheet. You can actually pop these into the oven with your baked feta dip the last 10 minutes it’s cooking so they will be ready at the same time. Once you pull the crostini out of the oven, sprinkle them with a little sea salt, and they’re ready to serve!

How To Make This Easy Baked Feta Dip

This recipe is seriously so easy, you’ll be surprised how “flavor popping” it is!

Preheat the oven to 400°.

Place the block of feta in a small ovenproof baking dish. Around the feta, add both types of tomatoes, shallots, and the garlic. Sprinkle the herbs on top of the ingredients, then pour oil on top until everything is covered.

Stick the dish in the oven and bake for about 35-40 minutes or until the cheese is bubbly and the garlic is tender.

Baked Garlic Confit Feta Dip

Ingredients

  • 8 oz block of feta
  • 5-6 cherry tomatoes sliced in half
  • 1 head of garlic peeled and broken into gloves
  • 1 small shallot sliced
  • 1/3 cup sun-dried tomatoes
  • 1/3 cup fresh dill finely chopped
  • 2 tbsp fresh parsley finely chopped
  • 1 1/2-2 cups oil avocado or olive
  • salt and pepper to taste

Instructions

  • Preheat oven to 400°.
  • Place block of feta in small oven-proof baking dish. Surround with tomatoes, shallots, sun-dried tomatoes, and garlic. Sprinkle dill, parsley, salt, and pepper on top. Pour oil over all ingredients until covered.
  • Baked for 35-40 minutes until bubbly and garlic is tender.
