Tips for making these delicious cookie dough bites

I like to buy my raw cashews in bulk, since this is BY FAR the cheapest option. I get mine shipped directly to me from Amazon. Here’s the link!

The key to this recipe is texture. When you are blending your cashews you have to be careful not to go TOO far and make cashew butter. You want to wait until you can see the natural oil release and it starts to look a little oily but they are still pretty coarsely ground. You can see this in the video above!

Mix it up and add in all kinds of things from sprinkles, to pretzel bits, to chocolate chunks, seriously there are endless possibilities!

Ingredients

  • 1 cup raw cashews
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp kosher sea salt
  • 1/4 tsp cinnamon
  • 1/2 cup chocolate chips

Instructions

  • In a food processor, start to blend your cashews. Once they become coarsely ground and start to release the natural oils stop blending and add your maple syrup, vanilla extract, salt and cinnamon. Blend for a couple more seconds or until you see the mixture start to ball up. This happens fairly quickly.
  • Once it's a nice doughy consistency, remove from the food processor and place into a bowl and carefully fold in the chocolate chips. Store in an airtight container in the fridge for up to a week or in the freezer for up to a month!
