Not only are they simple and take barely any time at all, but they are DELICIOUS. Almond butter and peanut butter with coconut flakes mixed in? Yes, please. They literally just melt. in. your. mouth. Keto can be hard, trust me I know, but these cookies will make all the difference. There is only around 3 grams of carbs in each cookie!
ingredients you’ll need
- Peanut Butter
- Almond Butter
- Unsweetened Shredded Coconut
- Coconut Oil
- Vanilla Extract
- Salt
how to make these nut butter cookies
Line a baking sheet with parchment paper.
Place your almond butter, peanut butter, and coconut oil into a medium sized bowl. Microwave in 30 second ingredients until combined well.
Add vanilla extract, shredded coconut, and salt and mix until well combined.
Spoon out 1/4 cup of mixture onto the cookies sheet in a circle. They will spread and become pretty thin, but that is normal.
Place in the freezer for 20 minutes, then enjoy!

tips for making keto no bake nut butter cookies
You can use all peanut butter OR all almond butter, if you don’t have both!
Store in an air tight container and keep in the fridge.
