What does kimchi taste like?

Kimchi is a yummy Korean dish made from fermented veggies like cabbage and radishes. It’s kinda spicy, kinda tangy, and super flavorful, with a crunchy texture. Imagine pickles with a kick, and you’ve got kimchi—a tasty treat that adds zing to any meal!

How to make Kimchi Mayo

This is super simple and only involves a couple of steps!

Over medium heat cook the kimchi in the oil until caramelized, about 8 minutes. Add the sugar, red pepper flakes and kimchi juice and stir to combine.

Remove from heat and let cool for at least 10 minutes. Add the mayo and rice wine vinegar and stir until fully incorporated. Store in am air tight container in the fridge and it should last for 2 weeks or longer (doubt it sticks around that long though)!

What kind of kimchi should I use?

The best Kimchi to use is your favorite Kimchi! You *can* use any kind, so the one with your favorite flavor will be the best for this.

Can I use store bought mayo or homemade?

BOTH! I like to use homemade mayo most of the time, just because I like the flavor and health factors more, but you can absolutely use store bought mayo! I use Chosen brand mayo when I buy it at the store.

Can I leave out the red pepper flakes?

Absolutely. Kimchi already has a spice from peppers, so this just ups the boost of spice. If you want it to be less spicy you can definitely leave the red pepper flakes out.
