How to make Miso Roasted Veggies

First preheat the oven to 400°F. Now you will want to prep your veggies. In this recipe I use leeks, carrots, and shallots. Slice each about 1 inch thick, then arrange in a 10-12″ oven safe skillet. I like to use cast iron. THIS is the one I use!

Next, mix all the ingredients for the sauce together. This is everything except the veggies. Now pour over your veggies in your skillet, and roast in the oven for 40 minutes. They should be fork tender by then. Remove from the oven and let cool slightly before serving!

Can I use other vegetables?

Yes! Absolutely use whatever sounds best to you. The veggies that will do best will be thicker, root vegetables. Think carrots, onions, rutabaga, parsnips, sweet potatoes and potatoes.

What does miso paste taste like?
There are a lot of different types of miso paste, but they all generally add a salty flavor – called umami – to a dish. It’s not so distinct that you will notice it as much as you will notice the fullness of flavor it adds!

Can I use another miso paste instead of white?

Yes! Feel free to use whatever miso paste you can find or prefer. I love them all and switch it up regularly. Red adds a little more depth and umph as a flavor, whereas white tends to be a little sweeter and lighter. Experiment for yourself!

Ingredients

  • 3 carrots cut 1" thick
  • 1-2 shallot cut 1" thick
  • 2 leeks cut 1" thick
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 2 tbsp white miso
  • 1 cup chicken stock
  • 3 cloves garlic minced
  • Salt

Instructions

Notes

  1. You can use whatever vegetables sound best to you. The veggies that will do best will be thicker, root vegetables. Think carrots, onions, rutabaga, parsnips, sweet potatoes and potatoes. 
  2. If you need to use another type of miso paste that is also okay! It will just taste slightly different but they do all add the same pop of umami.
