What is aioli exactly?

An aioli is a creamy sauce made by mixing garlic, oil, and sometimes egg yolk or mayonnaise. It’s like a garlicky mayonnaise, often used as a dip or spread in Mediterranean cuisine. Mayo-based aioli is simple to make and enhances the flavor of sandwiches, fries, and seafood effortlessly!

How to make Pesto Aioli

If we are talking for real time to just make pesto aioli, once you have the pesto and mayo, then we are talking MINUTES. It’s a matter of mixing a couple ingredients together in a bowl and letting the flavor build and build.

First, you need mayo, and I make my own (post coming soon will link promise). Then you need pesto! Here is MY WALNUT PESTO recipe, and that is what I used for this, and most all other things pesto in my life and on my blog. You can get a huge bag of walnuts on Amazon and you’re set for a while!

Once you have your mayo and pesto, it’s just a matter of mixing in a little more garlic, avocado oil, lemon juice, salt and pepper. Stir them all up and enjoy on sandwiches, with pizza, I mean honestly the options are endless!

How can I use this Pesto Aioli?

It’s so delicious, so you will want to put it on everything. My favorite things are definitely on sandwiches, as a dip for pizza or veggies, and its GREAT mixed into egg or tuna salad.

How much garlic is too much garlic?

The limit does not exist. JK, but for real you can make this as strong or mild as you wish! I like a more intense garlic flavor but my husband struggles with it, so I make us 2 separate ones in no time.

Is this “true” aioli”?

Yes and no, mainly no. Aioli generally just uses the egg yolk and mayonnaise is made using the egg white too. Pretty much all other ingredients are the same, you are seriously half way to garlic aioli with mayo, it’s just missing the garlic! And for this pesto aioli, just the pesto!!!

  • 1/2 cup mayonnaise *see notes
  • 1/3 cup pesto *walnut pesto recipe linked in notes
  • 1 clove garlic smashed and turned into a paste
  • 2 tbsp avocado/olive oil
  • 1 tbsp fresh lemon juice
  • 1/4+ tsp salt *to taste
  • 1/4+ tsp fresh cracked pepper *to taste


  • Once you have your mayonnaise and pesto of choice, combine all ingredients in a medium bowl with a whisk until desired consistency is achieved.


  1. I like to use homemade mayo and have an avocado mayo recipe coming very soon, but you can definitely use store bought!
