Red Wine Braised Short Ribs
Serve 6-8

Ingredients//
•2 lbs beef short ribs
•applewood smoking chips
•1 tbsp olive oil
•2 tbsp butter
•1 large onion, thinly sliced
•3 carrots, sliced
•12 oz mushrooms, sliced
•5 garlic cloves, minced
•2 tbsp apple cider vinegar
•1 tsp thyme, fresh
•1 tsp rosemary, fresh and chopped
•1 tsp kosher sea salt
•2 cups beef broth
•1 ½ cups red wine
•1/4 cup dark chocolate
•2 bay leaves
•1 tbsp cornstarch + 1 tbsp water *optional for “gravy”

Method//
Place the applewood smoking chips in the section at the bottom of the smoker that has the heat coil. Place all your short ribs on the provided racks and place inside the smoker. Place the lid on and turn to ‘COLD SMOKE’ and it will set for 30 minutes. Once they are done smoking, heat the olive oil in a large heavy bottomed pot until it shimmers, and then sear the short ribs on each side. Remove once they are all seared. Add the onions, carrots, and mushrooms and let cook down for about 5-7 minutes. Add in garlic and cook until fragrant, another minute or so. Add in the apple cider vinegar, thyme, rosemary, salt, chocolate and stir. Place this mixture in the pot of the slow cooker, then add in your wine, broth, and bay leaves and stir. Place the lid on and set to ‘SLOW COOK’ for 4 hours. Once done, easily pull the meat off of the short rib bones and discard the bones as well as the bay leaves. At this point you can add the cornstarch slurry to make the sauce thicker. Best served over mashed potatoes or polenta!

✨COOKBOOK RECIPE! ✨Y’all, it’s only 20 day

✨COOKBOOK RECIPE! ✨Y’all, it’s only 20 days until my cookbook is out! 🥹 This Fondant Sweet Potato with Miso Maple Walnut Glaze is by far my favorite way to eat sweet potatoes (and personally one of my favorite recipes in the cookbook). It’s crazy decadent and SO easy to make you won’t even believe it.

I have to shorten the recipes for IG but my cookbook is filled with super easy to follow directions and tips for this recipe and so many more!

FONDANT SWEET POTATO INGREDIENTS//
•3-4 sweet potatoes, peeled and cut into rounds 1 ½” tall
•2 tbsp olive oil
•4 tbsp unsalted butter, cut into 4
•1 cup chicken or vegetable stock
•½ tsp salt + more for finishing
•Fresh thyme for garnish

MISO MAPLE GLAZE INGREDIENTS//
•1 cup walnuts, chopped small
•2 tbsp unsalted butter
•¼ cup maple syrup
•1 tsp brown rice miso paste
•1 tbsp water

METHOD//
Preheat oven reheating to 400°F. In a large cast iron skillet, or any large ovenproof skillet, heat the olive oil until it shimmers. Add sweet potato rounds evenly around the skillet and allow to sear for 3 minutes on each side. Add the butter, allow to melt and foam, and then pour the vegetable stock in the dish. Place in the oven and bake for 30 minutes.

In a small skillet, dry toast the walnuts for 2-3 minutes over medium heat until they start to brown, then add 2 tbsp of butter and mix into the walnuts. Turn the heat to low and add your maple syrup, miso syrup and water. Mix well and cook down for a couple minutes until thick.

Once the potatoes are done, you can either leave them in the skillet to serve or remove to a plate. Drizzle the Miso Maple Walnut Glaze over the top, sprinkle with some flakey sea salt and thyme. Serve warm!

(recipe👇) Pumpkin Pie Bites! These are the easiest way to enjoy pumpkin pie without actually having to make one. This simple Thanksgiving dessert will be the perfect last bite to a fabulous dinner!

Ingredients//
•1 package pre made pie dough
•1 cup pumpkin purée
•1/3 cup brown sugar
•2 ounces cream cheese, room temp
•1/2 tsp pumpkin pie spice
•1/2 tsp salt
•I like to add a teeny dash of cayenne pepper too
•egg + 1 tbsp water for egg wash

Method//
Preheat oven to 400F. Like a baking sheet with parchment paper. In a medium bowl, whip pumpkin purée, brown sugar, cream cheese and spices together until well combined. Roll out your pre made dough and cut as many 4” circles you can. Place 1 tsp of your mixture to one side of the dough circle, then fold the other side over and seal with the prongs of a fork. Make a slit in the top with a sharp knife, then brush with egg wash. Bake for 18-20 minutes, or until golden brown.

(recipe👇) these miso brown butter whipped potatoes are out of this world and perfect for Thanksgiving!

•5 medium russet potatoes, peeled
•1/2 cup butter
•2 tbsp miso paste ( I used white but you can also use red it will just be more powerful)
•1 1/4 cups whole milk, plus a little more if needed
•salt to taste (~1/2 tsp)
•chives or green onions to top

First make your brown butter because you want it to cool to room temp for the best results. We are aiming for a softened butter consistency once we are ready to assemble. Melt you butter in a small pan over medium heat until the milk solids sink to the bottom (first white) and turn brown. This can take anywhere from 8-20 minutes depending on how hot your stove is. Remove and pour into a heat proof bowl. I stick mine in the fridge for 10 minutes and allow it to cool, then bring it out, whip it up with a small whisk or fork and let it thicken at room temp until ready to use.

Place your potatoes in a large pot over medium/high heat and cover with water about 2” over the potatoes. Cook your potatoes whole so they don’t fall apart as easily, unless they are huge then slice in half. If you want super creamy potatoes you want to remove any knot in the potato as well. Bring the water to a boil and then reduce to a simmer for 25-30 minutes, or when they are easily pierced by a fork. Drain and place in the bowl of a stand mixer (or a large bowl) and slightly mash with a wooden spoon or potato masher.

Your butter should be pretty thick by now. Whip it up and then add your miso to the butter and mix well. Turn stand mixer on to low/medium (or use a hand mixer) and add your miso butter 1-2 tbsp at a time until all of it is incorporated. Turn mixer down to low and drizzle your whole milk in while the stand mixer is running, until desired creaminess is reached. Add your salt to taste, and then serve with a drizzle of brown butter and chives!

(recipe👇) Caramelized Pears are the PERFECT easy Thanksgiving of Fall dessert! 🙌 Not only are they beautiful, but they are simply divine tasting.🍐

Ingredients//
•2 Bosc pears
•4 teaspoons lemon juice
•1 tbsp chai spice (cinnamon, ginger, all spice, cardamom, clove)
•1/4th cup brown sugar
•4 tbsp butter

Method//
Preheat the oven to 400F. Peel your pears, slice them in half and scoop out the core. Place them all cut side up in a baking dish that fits them snuggly. Drizzle 1 tsp of lemon juice over each pear half. Sprinkle the chai spice all over the top and cover with sugar. Dice the butter and place cubes on top of pears. Bake for 25 minutes and then flip, spoon some of the liquid over the backs and bake for another 20 minutes. Let cool for 5 minutes and then serve warm with a sprinkle of granola and a scoop of ice cream!
