Why Walnuts?

Walnuts are one of my favorite things in the world, and I’ll tell you why. Not only are they DELICIOUS, but they have SO many benefits! Here are some great things walnuts can do for you:

  • Heart Health: Rich in omega-3 fatty acids
  • Brain Function: The omega-3 fatty acids found in walnuts are also beneficial for brain health, supporting cognitive function and potentially reducing the risk of age-related cognitive decline.

This Tomato Pesto “Sandwich” is my favorite way to eat pesto period! It involves a delicious slice of homemade sourdough bread, huge spread of pesto topped with tomatoes and mozzarella or any of your favorite cheeses. Heat in the oven at 350°F for 5 minutes or until your cheese is melty!

How to make Walnut Pesto

It literally couldn’t be easier to make this pesto. All you do is put everything besides the oil in your food processor, blitz up for a couple pulses, then slowly add the oil while the food processor is running. Add more or less salt to your specific tastes, and more or less oil to get whatever kind of consistency you want.

The reason I love this so much is because its SO fresh and you can make it start to finish in 15 minutes, including picking your basil fresh from your garden.

Walnut Pesto

This easy to make, super fresh walnut pesto is not only delicious but has added benefits of walnuts – a superfood!

  • 1 food processor


  • 2 cups fresh basil
  • 1/2 cup walnuts
  • 2 garlic cloves
  • 1/2 cup parmesan cheese
  • 1-2 tbsp lemon juice, fresh
  • 1/4 cup avocado/olive oil
  • 1/2 tsp salt + more to taste
  • fresh ground pepper to taste *optional


  • Put everything except the oil into a food processor and pulse to combine. Then while running drizzle in the oil until you get the consistency you want! Add more salt and pepper to taste.


  1. Store in an airtight container in the refrigerator for up to a week!
