Blueberry Peach Cobbler

This 4 person Blueberry Peach Cobbler is the easiest and most delicious dessert ever! It's not too sweet and also a little tangy and has a fluffy crispy topping!

Ingredients

For the filling

  • 4 peaches diced
  • 1/2 cup blueberries
  • 2 tablespoons sugar
  • 1 teaspoon AP flour
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 tablespoon butter melted

For the topping

  • 1/2 cup AP flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons sugar
  • 5 tablespoons heavy cream
  • 1/4 teaspoon cinnamon
  • pinch of salt

Instructions

  • Preheat the oven to 400°F. In a medium bowl, mix all the ingredients for the filling together until the fruit it completely covered. Pour into a 4"x4" baking dish. Bake for 15 minutes, or until fruit is tender.
  • While the fruit is baking, make the topping. Mix all dry ingredients together. Then add in heavy cream until you have a sticky but pretty well formed dough.
  • Once you take the filling out of the oven, flatten out little discs of your dough and layer on top of the filling.
  • Bake for 15 minutes, or until golden brown on top. Serve warm with ice cream for the most delicious results!

Notes

*You can double this recipe and put it in an 8"x8" pan. This would be enough for about 8 people.
*Mix your heavy cream in one tablespoon at a time, until it holds together but is still kind of sticky. You don't want it to be too dry. I always knead mine a couple of times to make sure it's well incorporated.
*I like to make the topping with multiple discs of dough so there are little spaces for the fruit to bubble through. You can use one large disc to cover the whole top as well.
